Apple crumble cheesecake

Here’s a delicious recipe for Apple Crumble Cheesecake—a perfect combination of creamy cheesecake, cinnamon-spiced apples, and a buttery crumble topping.


Ingredients

For the crust:

  • 200g (7 oz) digestive biscuits or graham crackers, crushed
  • 100g (½ cup) unsalted butter, melted

For the cheesecake filling:

  • 500g (17 oz) cream cheese, room temperature
  • 150g (¾ cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 100ml (½ cup) sour cream or heavy cream

For the apple topping:

  • 2 large apples, peeled, cored, and chopped
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice

For the crumble topping:

  • 50g (¼ cup) all-purpose flour
  • 50g (¼ cup) brown sugar
  • 40g (3 tbsp) cold butter, cubed
  • ½ tsp cinnamon

Instructions

  1. Preheat oven:
    • Preheat to 350°F (175°C). Grease a 9-inch (23cm) springform pan.
  2. Make the crust:
    • Mix crushed biscuits with melted butter.
    • Press firmly into the base of the pan.
    • Bake for 8–10 minutes. Remove and let cool slightly.
  3. Prepare the apple topping:
    • In a small pan, combine apples, brown sugar, cinnamon, and lemon juice.
    • Cook over medium heat for 5–7 minutes until apples are slightly soft. Set aside to cool.
  4. Make the cheesecake filling:
    • Beat cream cheese and sugar until smooth.
    • Add eggs, one at a time, then stir in vanilla and sour cream/heavy cream.
  5. Assemble the cheesecake:
    • Spread half of the cheesecake filling over the cooled crust.
    • Spoon apple mixture evenly over the filling.
    • Top with remaining cheesecake filling.
  6. Make the crumble topping:
    • Mix flour, brown sugar, cinnamon, and butter until crumbly.
    • Sprinkle over the cheesecake.
  7. Bake:
    • Bake for 40–45 minutes until the cheesecake is set and the crumble is golden.
    • Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  8. Serve:
    • Slice and enjoy! Optional: drizzle with caramel sauce for extra indulgence.

✅ Tip: Use slightly tart apples like Granny Smith for a nice balance with the sweet cheesecake.
