Air Fryer Cod Recipe

Ingredients:

  • 4 cod fillets (fresh or thawed)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme or oregano (optional)
  • Salt and pepper, to taste
  • 2 tbsp olive oil (or cooking spray)
  • 1 lemon (for garnish and zest)

Optional:

  • Fresh parsley (for garnish)
  • Tartar sauce or aioli (for dipping)

Instructions:

1. Preheat the Air Fryer:

  • Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

2. Prepare the Cod Fillets:

  • Pat the cod fillets dry with paper towels to remove excess moisture (this helps the coating stick better).
  • Season the fillets with salt, pepper, and a squeeze of lemon juice.

3. Make the Coating:

  • In a shallow bowl or plate, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, and any optional herbs you’re using (like thyme or oregano).
  • Mix until everything is well incorporated.

4. Coat the Cod:

  • Lightly brush the cod fillets with olive oil (or spray with cooking spray). This helps the breadcrumbs get extra crispy in the air fryer.
  • Press each fillet into the breadcrumb mixture, coating it evenly on all sides.

5. Air Fry the Cod:

  • Place the coated cod fillets in the air fryer basket, making sure they’re not overlapping. You may need to cook in batches depending on the size of your air fryer.
  • Cook the cod fillets at 400°F (200°C) for 10-12 minutes, flipping them halfway through the cooking time. The fish should be golden brown and crispy on the outside, and flaky and tender on the inside.

6. Serve:

  • Remove the cod from the air fryer and squeeze fresh lemon juice over the top. Garnish with a sprinkle of fresh parsley if desired.
  • Serve with a side of tartar sauce, a green salad, or roasted vegetables.

  • Thickness Matters: Thicker fillets will take a little longer to cook, so keep an eye on them and adjust time as needed. Thin fillets may cook faster.
