  • 1 egg

  • 1 tsp salt

  • 1 tsp Dijon mustard (optional for flavor)

  • 1–2 tbsp olive oil (for brushing)

1. Make the mixture

  • In a large bowl, combine ground chicken, onion, garlic, breadcrumbs, egg, parsley, salt, pepper, paprika, and mustard.

  • Mix until well combined. Avoid overmixing to keep rissoles tender.

2. Shape the rissoles

  • Wet your hands slightly. Shape the mixture into small patties (about 2–3 inches in diameter).

  • Optional: lightly coat each rissole in extra breadcrumbs for a crispier crust.

3. Preheat air fryer

  • Preheat the air fryer to 180°C (350°F) for 3–5 minutes.

4. Cook the rissoles

  • Lightly brush or spray rissoles with olive oil.

  • Place them in the air fryer basket in a single layer (don’t overcrowd).

  • Cook 12–15 minutes, flipping halfway, until golden brown and internal temperature reaches 74°C (165°F).
