Basic Ingredients

  • ½ cup sugar
  • 2–3 eggs
  • 1 tsp vanilla extract

Simple Preparation

  1. Make caramel:
    • Heat sugar and water in a small saucepan over medium heat until it melts and turns golden brown.
    • Pour the caramel into the bottom of individual ramekins or a baking dish.
  2. Prepare custard:
    • Whisk eggs and sugar together in a bowl.
    • Heat milk until warm, then slowly mix into the egg-sugar mixture to temper the eggs.
    • Stir in vanilla.
  3. Combine and bake:
    • Pour custard over the caramel in the ramekins.
    • Place ramekins in a water bath (bain-marie) in the oven at 325°F (160°C).
    • Bake 30–40 minutes, until custard is set but slightly wobbly in the center.
  4. Cool and serve:
    • Let it cool, then refrigerate for a few hours.
    • To serve, run a knife around the edges and invert onto a plate so the caramel is on top.
