Cheesy chicken fritters

Here’s a simple, delicious recipe for Cheesy Chicken Fritters! These are crispy, cheesy, and perfect as a snack, appetizer, or even a light meal.


Ingredients (Serves 3-4)

  • 2 cups cooked chicken, shredded (rotisserie works great)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup grated Parmesan cheese (optional for extra flavor)
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 eggs
  • 2 tbsp chopped fresh parsley (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika or chili flakes (optional)
  • Oil for frying (vegetable or canola oil)

Instructions

  1. Prepare the mixture:
    In a large bowl, combine the shredded chicken, shredded cheese, breadcrumbs, Parmesan, onion, garlic, parsley, salt, pepper, and paprika. Mix well.
  2. Add eggs:
    Beat the eggs and stir them into the chicken mixture. The mixture should hold together; if too loose, add a little more breadcrumbs.
  3. Form fritters:
    Take small handfuls of the mixture and shape into patties or round balls. Roll lightly in extra breadcrumbs for a crisp coating.
  4. Heat oil:
    In a large skillet, heat about 1/4 inch of oil over medium heat until hot.
  5. Fry fritters:
    Fry the fritters in batches, 3–4 minutes per side, until golden brown and crispy. Make sure the chicken is fully heated through.
  6. Drain:
    Remove and place on paper towels to drain excess oil.
  7. Serve:
    Serve hot with a dipping sauce like ranch, aioli, or a spicy mayo.

💡 Tips:

  • You can add finely chopped bell peppers or corn for extra flavor.
  • For a lighter version, bake at 400°F (200°C) for 15–20 minutes, flipping halfway.
