🍳 Baked Cottage Cheese Eggs

Ingredients (serves 2–4)

  • 4 large eggs
  • 1 cup cottage cheese (full fat for creamier texture)
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional mix-ins:
    • Chopped spinach or kale
    • Diced bell peppers or onions
    • Cooked bacon, ham, or sausage
    • Shredded cheese (cheddar, mozzarella, or feta)
    • Fresh herbs (chives, parsley, dill)

Instructions

1. Preheat oven

  • Preheat oven to 350°F (175°C).
  • Grease a small baking dish (8×8-inch works well) or individual ramekins.

2. Mix the base

  • In a bowl, whisk together eggs, cottage cheese, milk, salt, and pepper until smooth.

3. Add mix-ins

  • Fold in any vegetables, meat, or shredded cheese you like.

4. Bake

  • Pour mixture into prepared baking dish.
  • Bake 25–35 minutes, or until the center is set and the top is lightly golden.
  • If using ramekins, check at 20 minutes.

5. Serve

  • Let cool 5 minutes before slicing.
  • Serve warm with toast, fresh fruit, or a side salad.
