Here’s a delicious, bakery-style Cream Cheese Coffee Cake — soft, buttery cake with a rich cream cheese layer and a cinnamon crumb topping. Perfect for breakfast, brunch, or a cozy dessert!


☕ Cream Cheese Coffee Cake

Ingredients

For the Cake Batter:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream (or plain Greek yogurt)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For the Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

For the Cinnamon Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup cold butter, cubed

Instructions

1. Prep

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish (or a 9×9 for a thicker cake).

2. Make the Cake Batter

  1. In a mixing bowl, beat butter and sugar until light and fluffy.
  2. Add eggs one at a time.
  3. Mix in sour cream and vanilla.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add dry ingredients to wet and mix until just combined (don’t overmix).

3. Make the Cream Cheese Filling

Beat together:

  • Cream cheese
  • Sugar
  • Egg
  • Vanilla
    until smooth and creamy.

4. Make the Crumb Topping

  • Combine flour, brown sugar, and cinnamon.
  • Cut in the cold butter with a fork or pastry cutter until crumbly.

5. Assemble the Coffee Cake

  1. Spread 2/3 of the cake batter evenly in the pan.
  2. Spoon the entire cream cheese filling over the batter.
  3. Dollop the remaining 1/3 batter on top in small spoonfuls (it won’t fully cover).
  4. Sprinkle the cinnamon crumb topping over everything.

6. Bake

Bake 38–48 minutes, or until the center is set and a toothpick inserted into the cake portion comes out clean.

Let cool at least 20 minutes before slicing.
