Cherry pie bars

Here’s a classic, easy, and delicious Cherry Pie Bars recipe — soft, buttery bars with a cherry pie filling layered in the middle. Perfect for parties or quick desserts!


🍒 Cherry Pie Bars Recipe

Makes: 12–16 bars
Total time: ~35–40 minutes

Ingredients

Dough/Batter:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional but AMAZING with cherry!)
  • 3 cups all-purpose flour
  • 1 tsp salt

Filling:

  • 1 can (21 oz) cherry pie filling

Glaze (optional but recommended):

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • 1/2 tsp vanilla or almond extract

Instructions

1. Make the dough

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well.
  4. Add vanilla (and almond extract if using).
  5. Mix in flour and salt until a thick batter forms.

2. Assemble the bars

  1. Spread about 2/3 of the dough into a greased 9×13 baking pan.
  2. Spread cherry pie filling evenly over the dough.
  3. Drop spoonfuls of the remaining dough over the top—no need to cover completely; it will spread a bit as it bakes.

3. Bake

  • Bake for 30–35 minutes, or until golden around the edges.
  • Let cool for at least 20 minutes.

4. Add the glaze

  1. Stir together powdered sugar, milk, and extract.
  2. Drizzle over cooled bars.

Cut into squares and enjoy!
