Yum — a no-bake eclair cake is one of the easiest (and most delicious) desserts ever! 😋
It tastes like a chocolate eclair but is made with layers of graham crackers, creamy pudding, and chocolate frosting — no oven needed!
🍰 No-Bake Eclair Cake Recipe

- 3 cups cold milk
- 1 container (8 oz) Cool Whip or 1½ cups whipped cream

Instructions
- Make the pudding layer:
- In a large bowl, whisk together pudding mix and cold milk until thickened (about 2 minutes).
- Gently fold in the Cool Whip until smooth and creamy.
- Assemble the layers:
- In a 9×13-inch dish, lay a single layer of graham crackers to cover the bottom.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture on top.
- Finish with one last layer of graham crackers.
- Make the chocolate topping:
- Heat the cream until just simmering (stovetop or microwave).
- Pour over chocolate chips and let sit 1 minute, then stir until smooth and glossy.
- Spread evenly over the top graham cracker layer.
- Chill:
- Cover with plastic wrap and refrigerate for at least 6 hours, or overnight if possible.
- The crackers soften and turn cake-like as it chills.
- Serve:
- Slice into squares and enjoy straight from the fridge!
