oven-baked rice pudding

Oven-baked rice pudding is a classic dessert made by slowly baking rice, milk, sugar, and flavorings until it becomes thick, creamy, and slightly golden on top. Baking gives it a richer flavor and a lightly caramelized surface compared to stovetop pudding.


Ingredients

  • ½ cup uncooked rice (short or medium grain works best)

  • 4 cups milk

  • ½ cup sugar

  • 1 tsp vanilla extract

  • ½ tsp cinnamon or nutmeg

  • 2 tbsp butter

  • 1 pinch salt

  • Optional: raisins, cardamom, or lemon zest


Instructions

  1. Preheat oven to 160–170°C (325°F).

  2. Grease a baking dish with a little butter.

  3. Add rice, milk, sugar, salt, and butter to the dish and mix.

  4. Sprinkle cinnamon or nutmeg on top.

  5. Bake for 1½–2 hours, stirring once or twice during the first hour.

  6. When the rice is tender and the pudding thickens, stir in vanilla.

  7. Let it cool slightly before serving.


Tips for Best Flavor

✨ Use full-fat milk for creamier pudding.
✨ Add raisins halfway through baking so they stay soft.
✨ For a richer version, replace 1 cup of milk with cream.
✨ Sprinkle extra nutmeg or cinnamon on top before serving.

  • Warm for a cozy dessert

  • Cold from the fridge for a thicker pudding

  • With honey, nuts, or fruit
