Ingredients (Serves 6–8)

  • Frozen hash browns – 1 (30 oz) bag, thawed
  • Cream of chicken soup – 1 can (10.5 oz)
  • Sour cream – 1 cup
  • Shredded cheddar cheese – 2 cups, divided
  • Butter – ½ cup (1 stick), melted
  • Onion – ½ cup, finely chopped (optional)
  • Salt & pepper – to taste
  • Optional topping: crushed cornflakes or breadcrumbs for crunch

Instructions

1. Preheat and prepare:

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13-inch baking dish.

2. Mix the casserole:

  1. In a large bowl, combine hash browns, cream of chicken soup, sour cream, 1½ cups cheddar cheese, melted butter, onion (if using), salt, and pepper.
  2. Stir until evenly mixed.

3. Assemble:

  • Pour the mixture into the prepared baking dish.
  • Sprinkle the remaining ½ cup cheddar cheese on top.
  • Optional: top with crushed cornflakes or breadcrumbs for a crispy topping.

4. Bake:

  • Bake for 45–55 minutes, until casserole is bubbly and the top is golden brown.

5. Serve:

  • Let it rest 5 minutes before serving. Enjoy warm!

Tips:

  • For a vegetarian version, swap cream of chicken soup for cream of mushroom soup.
  • Add cooked bacon, ham, or sausage for extra flavor.
  • Make-ahead: Assemble the casserole, cover tightly with foil, and refrigerate overnight. Bake the next day, adding about 10 extra minutes.
