Chicken and Dumplings

🍲 Chicken and Dumplings (Classic Comfort Style)

Warm, hearty, and perfect for a cozy meal.

🛒 Ingredients

For the soup:

  • 2 tbsp butter
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1/4 cup flour
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 cup milk or half-and-half
  • 1 tsp dried thyme
  • Salt & black pepper to taste

For the dumplings:

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp fresh parsley (optional)
  • 2 tbsp cold butter, cubed
  • 1/2 cup milk

👩‍🍳 Instructions

1️⃣ Make the Soup Base

  1. In a large pot, melt butter over medium heat.
  2. Add onion, carrots, and celery. Cook 5–7 minutes until softened.
  3. Stir in garlic and cook 30 seconds.
  4. Sprinkle flour over vegetables; stir for 1 minute.
  5. Gradually whisk in chicken broth.
  6. Add thyme and bring to a gentle simmer.
  7. Stir in chicken and milk. Simmer 10 minutes until slightly thickened.

2️⃣ Make the Dumplings

  1. In a bowl, mix flour, baking powder, salt, and parsley.
  2. Cut in cold butter until crumbly.
  3. Stir in milk just until combined (don’t overmix).

3️⃣ Cook the Dumplings

  1. Drop spoonfuls of dough onto gently simmering soup.
  2. Cover with a lid.
  3. Simmer (don’t lift lid!) for 12–15 minutes until dumplings are fluffy and cooked through.

🍽️ Tips

  • Keep the soup at a gentle simmer, not a rolling boil.
  • Dumplings steam under the lid — lifting it can make them dense.
  • For extra richness, add a splash of heavy cream at the end.
