🛒 Ingredients (Makes 1 loaf)

Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • ½ cup plain yogurt or sour cream
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cranberries (roughly chopped if large)
  • ¼ cup orange juice

Glaze:

  • ½ cup powdered sugar
  • 1–2 tbsp fresh orange juice

1️⃣ Preheat oven

  • 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

2️⃣ Mix dry ingredients

  • In a bowl, whisk flour, baking powder, baking soda, and salt.

3️⃣ Mix wet ingredients

  • In another bowl, beat sugar, eggs, oil, yogurt, orange zest, orange juice, and vanilla until smooth.

4️⃣ Combine

  • Gradually add dry ingredients to wet ingredients. Stir until just combined (do not overmix).
  • Fold in cranberries.

5️⃣ Bake

  • Pour batter into prepared loaf pan.
  • Bake 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan 10 minutes, then transfer to a wire rack.

6️⃣ Add glaze

  • Whisk powdered sugar and orange juice until smooth.
  • Drizzle over slightly warm bread.

💡 Tips

  • Toss cranberries in a little flour before adding to the batter to prevent sinking.
  • For extra flavor, add ½ tsp ground cinnamon or nutmeg.
  • Can be frozen: wrap cooled loaf tightly and freeze up to 2 months.
