Here’s a comforting Creamy Chicken and Carrot recipe — rich, flavorful, and easy to make. Perfect for a weeknight dinner!


🍲 Creamy Chicken and Carrot

🧂 Ingredients (Serves 4)

  • 2 tbsp olive oil or butter
  • 1 lb (≈450 g) chicken breast or thighs, diced
  • 1 medium onion, finely chopped
  • 2–3 garlic cloves, minced
  • 3–4 large carrots, sliced into rounds or sticks
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 tsp dried thyme (or fresh)
  • Salt & pepper to taste
  • 1–2 tbsp flour (optional, for thicker sauce)
  • Fresh parsley for garnish

Optional: peas or mushrooms for extra veggies


👩‍🍳 Instructions

1️⃣ Cook the Chicken

  1. Heat oil or butter in a large skillet over medium heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until lightly browned and mostly cooked through (5–7 minutes). Remove and set aside.

2️⃣ Sauté Vegetables

  1. In the same skillet, add onion and garlic. Sauté until fragrant (2–3 minutes).
  2. Add carrots and cook 5 minutes until slightly tender.

3️⃣ Make the Creamy Sauce

  1. Sprinkle flour over veggies (if using) and stir to coat.
  2. Pour in chicken broth and bring to a simmer.
  3. Stir in heavy cream, thyme, and return chicken to the skillet.
  4. Simmer 8–10 minutes until chicken is cooked and carrots are tender.

4️⃣ Finish & Serve

  • Taste and adjust salt and pepper.
  • Garnish with fresh parsley.
  • Serve over rice, pasta, or mashed potatoes.

🔥 Tips for Extra Flavor

  • Use bone-in chicken pieces for deeper flavor, then remove bones before serving.
  • Add a squeeze of lemon juice at the end for brightness.
  • For a lighter version, use half Greek yogurt and half broth instead of cream.
