🛒 Ingredients (makes 6–8 small pancakes)

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ teaspoon vanilla extract (optional)
  • ½ teaspoon baking powder (optional, for fluffier texture)
  • Pinch of salt
  • Butter or oil for cooking

Optional add-ins:

  • Cinnamon
  • Lemon zest
  • A tablespoon of sweetener (honey, maple syrup, or stevia)

  1. Blend the batter:
    Add cottage cheese and eggs to a blender. Blend until smooth.
