Ingredients (serves 4)

  • 4 bratwurst sausages

Instructions

1. Sear the Brats

  • In a large skillet over medium heat, melt butter or heat oil.

  • Add brats and sear for 2–3 minutes on each side until lightly browned.

Browning adds flavor and helps the sausage skin stay intact.

2. Add Onions & Beer

  • Remove brats briefly and sauté onions (and garlic if using) in the same skillet for 3–4 minutes until softened.

  • Return brats to the skillet and pour in beer until sausages are mostly submerged.

3. Simmer

  • Bring to a simmer, cover, and cook for 15–20 minutes, turning brats halfway through.

  • This allows the beer and onions to infuse flavor.

4. Finish

  • For grill marks and extra flavor, preheat a grill or skillet and briefly sear the brats for 2–3 minutes per side after braising.

  • If no grill: increase heat in skillet to brown a little before serving.

5. Serve

  • Serve brats in buns topped with braised onions and mustard.

  • Optional: add sauerkraut, pickles, or other favorite condiments.


Tips & Variations

  • Beer choice: A lighter lager gives a subtle flavor; darker ales/stouts give a richer, maltier taste.

  • Flavor boost: Add a splash of apple cider vinegar or a pinch of paprika to the braising liquid.

  • Make ahead: Brats can be braised ahead of time, then finished on the grill just before serving.

  • Vegetable additions: Bell peppers, mushrooms, or carrots can braise along with onions for a more complex side.
