No-Bake Homemade Clodhoppers
Ingredients:

3 cups crispy rice cereal or graham cracker crumbs

1 cup chocolate chips (milk, semi-sweet, or dark)

½ cup peanut butter (or any nut butter)

¼ cup honey or corn syrup

1 teaspoon vanilla extract

Pinch of salt

Instructions:

Line a tray
Line a baking sheet or tray with parchment paper. -
Melt chocolate mixture
In a medium saucepan over low heat, combine the chocolate chips, peanut butter, and honey. Stir until smooth. Remove from heat and stir in vanilla and salt. -
Mix in the cereal or crumbs
Fold in the rice cereal or graham cracker crumbs until fully coated. The mixture should be thick and sticky. -
Form the clodhoppers
Use a spoon to scoop small clusters and drop them onto the prepared tray. Press gently to shape if needed. -
Optional coating
Roll each cluster lightly in powdered sugar for that classic “clodhopper” look. -
Chill
Refrigerate for at least 1 hour until firm. -
