Ingredients
Chicken
- 2–3 lb chicken (drumsticks, thighs, or cut-up whole chicken)
Buttermilk Marinade
- 2 cups buttermilk
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp cayenne (adjust heat)
- 1 tsp garlic powder
- ½ tsp onion powder
- Optional: hot sauce (2–3 tbsp)
Seasoned Flour
- 2½ cups all-purpose flour
- 1 tbsp paprika
- 2 tsp cayenne (or to taste)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp salt
For Frying
- Peanut, canola, or vegetable oil
Instructions
- Marinate
Mix marinade ingredients. Submerge chicken. Cover and refrigerate at least 4 hours, overnight is best. - Dredge
Remove chicken from buttermilk (let excess drip). Coat heavily in seasoned flour.

Let coated chicken sit 10–15 minutes—this helps the crust stick. - Fry
Heat oil to 325–340°F / 165–170°C.
Fry in batches 12–15 minutes, turning occasionally, until golden and 165°F internal. - Drain & Season
Rest on a rack. Sprinkle a little salt while hot.
