Easy Beef Roast (Oven or Slow Cooker)
Ingredients
- 3–4 lb beef chuck roast (most forgiving cut)
- 1 packet dry onion soup mix (or salt + pepper + garlic if you don’t have it)
- 3–4 potatoes, chopped
- 3 carrots, chopped
- 1 onion, sliced (optional but great)
- 1–2 cups beef broth or water
- 2 tbsp oil
Quick Prep
- Preheat oven to 300°F (150°C)
(Skip if using slow cooker) - Season & sear (optional but worth it):
Salt & pepper the roast. Heat oil in a pan and brown it 2–3 minutes per side. - Throw it together:
Put potatoes, carrots, and onion in a roasting pan or slow cooker.
Place beef on top. Sprinkle onion soup mix over everything.
Pour broth around the meat (not over it).
Cook It
Oven:
- Cover tightly with foil or lid
- Cook 3–4 hours, until fork-tender
Slow Cooker:
- LOW for 8 hours or HIGH for 4–5 hours
Optional Upgrades (still easy)
- Add a splash of Worcestershire sauce
- Toss in garlic cloves
- Thicken juices with a little cornstarch for gravy
