Carrot Cake Cheesecake

Ohhh wow, Carrot Cake Cheesecake 🥕🍰—that’s a power move dessert. You get spiced, moist carrot cake and rich, creamy cheesecake in one glorious slice. Here’s a tried-and-true version that actually bakes up clean and beautiful.


Carrot Cake Cheesecake

Ingredients

Carrot Cake Layer

  • 1 ¼ cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups finely grated carrots
  • ½ cup crushed pineapple, well drained
  • ½ cup chopped walnuts or pecans (optional)

Cheesecake Layer

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup sour cream or heavy cream

Cream Cheese Frosting (Optional but Amazing)

  • 4 oz cream cheese, softened
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Prep
    Preheat oven to 325°F (165°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Make carrot cake batter
    In a bowl, whisk flour, sugars, baking soda, cinnamon, nutmeg, and salt.
    Add oil, eggs, and vanilla. Mix until smooth.
    Fold in carrots, pineapple, and nuts.
  3. Make cheesecake batter
    Beat cream cheese and sugar until smooth.
    Add eggs one at a time, then vanilla and sour cream.
  4. Layer
    • Pour ½ of the carrot cake batter into the pan.
    • Carefully spread all of the cheesecake batter on top.
    • Spoon remaining carrot cake batter over cheesecake and gently spread.
  5. Bake
    Bake 75–90 minutes, until center is just set.
    Turn oven off, crack door, and let cheesecake cool inside 1 hour.
  6. Chill
    Refrigerate at least 4 hours, preferably overnight.
  7. Frost (optional)
    Beat frosting ingredients until smooth. Spread or pipe on top before serving.

Pro Tips

  • Finely grated carrots = moist cake, no crunch.
  • Drain pineapple REALLY well or the cake gets soggy.
  • If edges brown too fast, tent loosely with foil.
