🧀 Cheesy Potato Sausage Casserole

1 lb (450 g) smoked sausage or kielbasa, sliced into ¼-inch rounds

1 (10.5 oz) can cream of mushroom or cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese (plus more for topping)

1 small onion, finely chopped

4 cups frozen or fresh diced potatoes (hash browns or parboiled fresh potatoes)

2 tbsp butter or oil

Salt & pepper, to taste

Optional: ½ tsp garlic powder, ½ tsp paprika, chopped parsley for garnish
Instructions

Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish. -
Cook the sausage:
In a skillet over medium heat, sauté the sliced sausage in butter or oil until browned. Add the chopped onion and cook until translucent (about 3–4 minutes). -
Mix the sauce:
In a large bowl, combine the cream soup, sour cream, milk, cheddar cheese, and seasonings (salt, pepper, garlic powder, paprika). -
Assemble the casserole:
Add the cooked sausage mixture and potatoes to the bowl. Stir to coat everything evenly in the cheesy sauce. -
Bake:
Spread mixture into the prepared casserole dish. Top with extra cheese if desired.
Bake 35–40 minutes, or until bubbly and golden on top. -
Garnish & serve:
Let rest for 5–10 minutes before serving. Sprinkle with chopped parsley or green onions.
