🧀 Cheesy Potato Sausage Casserole

Ingredients

  • 1 lb (450 g) smoked sausage or kielbasa, sliced into ¼-inch rounds

  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup

  • 1 cup sour cream

  • 1 cup shredded cheddar cheese (plus more for topping)

  • ½ cup milk

  • 1 small onion, finely chopped

  • 4 cups frozen or fresh diced potatoes (hash browns or parboiled fresh potatoes)

  • 2 tbsp butter or oil

  • Salt & pepper, to taste

  • Optional: ½ tsp garlic powder, ½ tsp paprika, chopped parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
    Lightly grease a 9×13-inch baking dish.

  2. Cook the sausage:
    In a skillet over medium heat, sauté the sliced sausage in butter or oil until browned. Add the chopped onion and cook until translucent (about 3–4 minutes).

  3. Mix the sauce:
    In a large bowl, combine the cream soup, sour cream, milk, cheddar cheese, and seasonings (salt, pepper, garlic powder, paprika).

  4. Assemble the casserole:
    Add the cooked sausage mixture and potatoes to the bowl. Stir to coat everything evenly in the cheesy sauce.

  5. Bake:
    Spread mixture into the prepared casserole dish. Top with extra cheese if desired.
    Bake 35–40 minutes, or until bubbly and golden on top.

  6. Garnish & serve:
    Let rest for 5–10 minutes before serving. Sprinkle with chopped parsley or green onions.


Tips & Variations

  • Add veggies: Stir in peas, bell peppers, or broccoli for extra color and nutrition.

  • Make it spicy: Use spicy sausage or add a pinch of cayenne or red pepper flakes.

  • Crispy top: Sprinkle crushed Ritz crackers or breadcrumbs mixed with melted butter before baking.
