Cajun Shrimp Foil Packets

Ingredients

  • 1 lb large shrimp, peeled & deveined
  • 2 tbsp melted butter or olive oil
  • 1–1Β½ tbsp Cajun seasoning (to taste)
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • Optional add-ins: sliced sausage, corn rounds, baby potatoes (parboiled), bell peppers

Directions

  1. Heat oven to 400Β°F (205Β°C) or preheat grill to medium-high.
  2. Toss shrimp with butter/oil, Cajun seasoning, garlic, and lemon juice.
  3. Divide shrimp (and add-ins) onto heavy foil sheets.
  4. Fold foil tightly into sealed packets.
  5. Cook:
    • Oven: 12–15 minutes
    • Grill: 8–10 minutes
  6. Carefully open (steam!) and finish with parsley or extra lemon.

Pro Tips

  • Shrimp cook FAST β€” don’t overdo it or they turn rubbery.
  • If using potatoes, parboil first or slice thin.
  • Want saucier? Add a splash of broth or extra butter before sealing.
