Garlic Steak Bites

Yes 👌 garlic steak bites are fast, loud, and ridiculously good. Let’s do it.


Garlic Steak Bites (10–15 minutes)

Ingredients

  • 450–600 g (1–1¼ lb) sirloin, ribeye, or strip steak
  • Salt & black pepper
  • 1 tbsp olive oil
  • 3 tbsp butter
  • 4–5 cloves garlic, minced
  • Optional: fresh parsley, chili flakes

Method

  1. Prep the steak
    • Cut steak into 1-inch cubes.
    • Pat dry (this matters).
    • Season generously with salt & pepper.
  2. Sear
    • Heat a heavy skillet (cast iron = best) on high.
    • Add olive oil.
    • Add steak bites in a single layer (work in batches if needed).
    • Sear 1–2 min per side until deeply browned.
    • Remove steak from pan.
  3. Garlic butter
    • Lower heat to medium.
    • Add butter to the same pan.
    • Add garlic and cook 20–30 seconds until fragrant (don’t burn it).
  4. Finish
    • Return steak to pan.
    • Toss in garlic butter for 30–60 seconds.
    • Sprinkle parsley or chili flakes if using.

Pro tips

  • Don’t crowd the pan or you’ll steam the steak.
  • Add garlic after the steak comes out so it stays sweet, not bitter.
  • Want extra sauce? Splash of beef broth or Worcestershire at the end.

Variations

  • Garlic parmesan: finish with grated parm
  • Honey garlic: drizzle honey + soy
  • Steakhouse: add thyme + a squeeze of lemon
  • Spicy: garlic + butter + Cajun seasoning
