  • 100 g (3.5 oz) unsalted butter

  • 150 g (5 oz) digestive biscuits, tea biscuits, or graham crackers, roughly chopped
  • 50 g (1.75 oz) chopped nuts (walnuts, hazelnuts, or almonds)

  • 1 tsp vanilla extract
  • Optional: 1–2 tbsp rum, brandy, or coffee liqueur
  • Powdered sugar, for coating

Instructions

1. Prepare chocolate mixture

  • In a heatproof bowl over simmering water (double boiler), melt chocolate and butter together until smooth.
  • Remove from heat and stir in sugar, eggs, cocoa powder, vanilla, and optional alcohol. Mix until fully combined.

⚠️ If using raw eggs, make sure to use very fresh eggs or temper them carefully. You can also substitute with pasteurized eggs or a little heavy cream to avoid raw eggs.

2. Add mix-ins

  • Gently fold in chopped biscuits and nuts until everything is evenly coated.

  • Spoon the mixture onto the parchment and shape into a log (about 2–3 inches thick).
  • Wrap tightly in parchment paper and twist the ends.

4. Chill

  • Refrigerate for at least 4 hours, ideally overnight, until firm.

5. Serve

  • Unwrap and roll in powdered sugar to resemble a real salami “casing.”
  • Slice into ½-inch thick rounds and serve.
