Sausage and Potato Skillet

Here’s a simple and delicious Sausage and Potato Skillet recipe you can try. I’ll give you a version that’s hearty, flavorful, and easy to make in one pan.


Ingredients (serves 3–4)

  • 1 lb (450 g) sausage (Italian, smoked, or your favorite type), sliced into ½-inch pieces
  • 4 medium potatoes, diced into ½-inch cubes
  • 1 medium onion, diced
  • 1 bell pepper (any color), diced
  • 2–3 cloves garlic, minced
  • 2 tbsp olive oil (or butter)
  • 1 tsp smoked paprika
  • ½ tsp dried thyme or oregano
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Optional: shredded cheese for topping


Instructions

  1. Prep the potatoes:
    • Heat a large skillet over medium heat and add 1 tbsp olive oil.
    • Add the diced potatoes and season with a little salt and pepper.
    • Cook for 10–12 minutes, stirring occasionally, until potatoes are golden and slightly tender. You can cover the skillet for a few minutes to help them cook through faster.
  2. Cook the sausage:
    • Push the potatoes to one side of the skillet (or remove them temporarily).
    • Add the sliced sausage to the skillet and cook until browned on all sides, about 5–6 minutes.
  3. Add vegetables:
    • Add the diced onion and bell pepper to the skillet. Cook for 3–4 minutes until softened.
    • Stir in the garlic, smoked paprika, and thyme. Cook for another 1–2 minutes until fragrant.
  4. Combine everything:
    • Mix the sausage and vegetables with the potatoes in the skillet.
    • Taste and adjust seasoning with salt and pepper. Cook for another 2–3 minutes so all the flavors meld together.
  5. Serve:
    • Garnish with chopped parsley and, if desired, a sprinkle of shredded cheese.
    • Serve hot, straight from the skillet.

✅ Tips:

  • For extra crispiness, parboil the potatoes for 5 minutes before adding to the skillet.
  • Swap bell peppers for zucchini or mushrooms if you like.
  • Add a dash of hot sauce or red pepper flakes for a little kick.
