Roasted Brussels sprouts with bacon

Posted on January 13, 2026 by Admin

Here’s a simple, flavorful recipe for Roasted Brussels Sprouts with Bacon—crispy, caramelized, and smoky, perfect as a side for any meal.

🥓 Roasted Brussels Sprouts with Bacon

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved
  • 4–5 slices bacon, chopped
  • 2 tbsp olive oil
  • Salt & black pepper, to taste
  • Optional: 1–2 tsp balsamic vinegar or maple syrup for a sweet finish

Instructions

  1. Preheat Oven
    • Preheat to 400°F (200°C).
    • Line a baking sheet with parchment or foil for easy cleanup.
  2. Prepare Brussels Sprouts
    • Trim ends and remove any yellow outer leaves.
    • Cut in half lengthwise for even roasting.
  3. Mix Ingredients
    • In a large bowl, toss Brussels sprouts with olive oil, salt, and pepper.
    • Add chopped bacon and mix well.
  4. Roast
    • Spread evenly on the baking sheet, cut side down for best caramelization.
    • Roast 20–25 minutes, stirring halfway, until sprouts are golden and tender and bacon is crispy.
  5. Optional Finish
    • Drizzle with balsamic vinegar or maple syrup while hot for a sweet-savory kick.
  6. Serve
    • Transfer to a serving dish and enjoy immediately.

Tips & Variations

  • Extra crisp: Roast at 425°F (220°C) for a few extra minutes.
  • Add aromatics: Toss in minced garlic or shallots in the last 5 minutes of roasting.
  • Spicy: Sprinkle with red pepper flakes or smoked paprika.
  • Cheesy twist: Sprinkle freshly grated Parmesan before serving.

I can also give a one-pan, sheet-pan dinner version with Brussels sprouts, bacon, and sausage or chicken that comes out crispy and flavorful.

Do you want me to do that?
