Slow cooker pork loin

Here’s a simple and tender Slow Cooker Pork Loin recipe 🐖🍲—perfect for a hands-off, juicy roast:


Ingredients (serves 4–6)

  • 1.2–1.5 kg (2.5–3 lb) pork loin
  • 2–3 cloves garlic, minced
  • 1 onion, sliced
  • 1 cup chicken or vegetable broth
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • Optional: 1 tsp dried herbs (thyme, rosemary, or sage)
  • Optional glaze: 2 tbsp honey or maple syrup

Instructions

1. Prep the pork

  1. Pat the pork loin dry with paper towels.
  2. Rub with olive oil, salt, pepper, and optional dried herbs.

2. Sear the pork (optional but recommended)

  1. Heat a skillet over medium-high heat.
  2. Sear the pork on all sides for 2–3 minutes until golden brown. This locks in flavor and juices.

3. Add to slow cooker

  1. Place the sliced onion and minced garlic in the bottom of the slow cooker.
  2. Put the seared pork loin on top.
  3. Pour the broth around the pork (not over the top, so the seasoning stays on).

4. Cook

  • Cover and cook on low for 6–8 hours or high for 3–4 hours, until the pork reaches an internal temperature of 63°C / 145°F.

5. Optional glaze

  • During the last 30 minutes, brush the pork with honey or maple syrup for a sweet finish.

6. Serve

  • Slice the pork loin and serve with the onions and juices from the slow cooker. Pairs beautifully with mashed potatoes, roasted veggies, or rice.

💡 Tips

  • Don’t overcook—pork loin can dry out if left too long.
  • You can add root vegetables (carrots, potatoes) to the slow cooker for a full meal.
  • Save leftover juices for a quick pan sauce—just simmer with a bit of cornstarch to thicken.
