Cream cheese custard bars

Here’s a Cream Cheese Custard Bars recipe — smooth, lightly sweet, and very old-fashioned dessert vibes 🧁

Ingredients

Crust

  • 1½ cups crushed graham crackers or vanilla wafers
  • ⅓ cup melted butter
  • 2 tbsp sugar

Cream cheese custard filling

  • 8 oz (225 g) cream cheese, softened
  • ½ cup sugar
  • 2 large eggs
  • 1 cup milk (whole or 2%)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Make the crust
    Mix crumbs, melted butter, and sugar.
    Press firmly into a greased 8×8-inch pan.
    Bake at 350°F (175°C) for 10 minutes, then set aside.
  2. Prepare the custard
    Beat cream cheese until smooth.
    Add sugar and mix well.
    Beat in eggs one at a time.
    Slowly mix in milk, vanilla, and salt until smooth (don’t overbeat).
  3. Bake
    Pour filling over warm crust.
    Bake at 325°F (165°C) for 35–45 minutes, until edges are set and center slightly jiggles.
  4. Cool & chill
    Cool completely, then refrigerate at least 2 hours before cutting into bars.

Optional toppings

  • Dust with powdered sugar
  • Add a thin layer of fruit topping (cherry, blueberry)
  • Sprinkle cinnamon or nutmeg on top before baking

Tips

  • Custard firms up as it chills—don’t overbake
  • For extra smooth texture, let ingredients come to room temp
  • These slice best when fully cold
