Instructions

1. Prepare the Oven & Pans:

  • Preheat oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.

2. Make the Cake Batter:

  1. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat eggs, butter, vanilla, crushed pineapple, and buttermilk until smooth.
  3. Gradually add the dry ingredients to the wet ingredients. Mix until just combined (don’t overmix).

3. Bake the Cake:

  • Divide the batter evenly between the prepared pans.
  • Bake 25–30 minutes, or until a toothpick comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

4. Make the Frosting:

  • Beat cream cheese and butter until smooth.
  • Gradually add powdered sugar and vanilla.

  • Place one cake layer on a serving plate. Spread frosting evenly.
  • Top with the second layer, frost the top and sides.
