Lemon Blueberry Cheesecake Cake

Components

  • Lemon cake layers
  • Cheesecake layer
  • Blueberry filling
  • Lemon cream cheese frosting

1️⃣ Cheesecake Layer

(Make first so it can chill)

Ingredients

  • 16 oz (450 g) cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup sour cream

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Beat cream cheese and sugar until smooth.
  3. Add eggs one at a time, then vanilla and sour cream.
  4. Pour into a greased, parchment-lined 9-inch pan.
  5. Bake 35–40 minutes until just set.
  6. Cool completely, then chill at least 2 hours.

2️⃣ Lemon Blueberry Cake Layers

Ingredients

  • 2½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup sugar
  • ½ cup butter, softened
  • 2 eggs
  • 1 cup buttermilk
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1½ cups blueberries (tossed with 1 tbsp flour)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy.
  3. Add eggs, lemon zest, and juice.
  4. Mix dry ingredients separately.
  5. Alternate adding dry ingredients and buttermilk.
  6. Gently fold in blueberries.
  7. Divide into two greased 9-inch pans.
  8. Bake 25–30 minutes. Cool completely.

3️⃣ Blueberry Filling

Ingredients

  • 1½ cups blueberries
  • ¼ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch + 1 tbsp water

Instructions

  1. Cook blueberries, sugar, and lemon juice over medium heat.
  2. Stir in cornstarch slurry.
  3. Simmer until thick. Cool completely.

4️⃣ Lemon Cream Cheese Frosting

Ingredients

  • 12 oz cream cheese, softened
  • ½ cup butter, softened
  • 3–4 cups powdered sugar
  • 2 tbsp lemon juice
  • Lemon zest (to taste)

Instructions

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar gradually.
  3. Mix in lemon juice and zest.

5️⃣ Assemble the Cake

  1. Place one lemon cake layer on a plate.
  2. Spread a thin layer of frosting.
  3. Add the cheesecake layer.
  4. Spoon blueberry filling evenly.
  5. Top with second cake layer.
  6. Frost the entire cake.
  7. Chill 30–60 minutes before slicing.

Tips

  • 🍰 Freeze cheesecake layer briefly for easier stacking
  • 🫐 Fresh or frozen blueberries both work
  • 🍋 Add lemon curd between layers for extra citrus flavor
