Here’s a hearty, cozy Baked Potato with Sausage and Herbs recipe—easy and very satisfying 🥔🌿

Baked Potato with Sausage & Herbs

Ingredients (2–3 servings)

  • 3–4 russet potatoes
  • 12 oz sausage (smoked sausage, chicken sausage, or pork sausage)
  • 1 tbsp olive oil
  • 1 small onion, diced (optional)
  • 2 cloves garlic, minced
  • 1 tsp dried thyme or rosemary (or 1 tbsp fresh, chopped)
  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • 1–2 tbsp butter (optional)
  • Fresh herbs for garnish (parsley, chives, or thyme)

Optional toppings

  • Sour cream or Greek yogurt
  • Shredded cheese
  • Cracked red pepper flakes

Instructions

  1. Bake the potatoes
    • Preheat oven to 400°F (205°C).
    • Scrub potatoes, poke a few holes with a fork, rub lightly with oil and salt.
    • Bake directly on the rack for 50–60 minutes, until tender.
  2. Cook the sausage
    • Slice sausage into rounds or chunks.
    • Heat olive oil in a skillet over medium heat.
    • Add sausage and cook until browned.
    • Add onion (if using) and cook 3–4 minutes until soft.
    • Stir in garlic and herbs; cook 30 seconds until fragrant.
    • Season with salt and pepper.
  3. Assemble
    • Slice potatoes open and fluff the insides with a fork.
    • Add butter if using.
    • Spoon sausage mixture over the potatoes.
    • Finish with fresh herbs and any toppings you like.

Tips & Variations

  • Extra crispy: Scoop out some potato, mix with sausage, then stuff back in and broil 3–5 minutes.
  • Veggie add-in: Mushrooms, bell peppers, or spinach work great.
  • Creamy version: Stir a little sour cream or cheese into the sausage mixture before topping.
