- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 smoked ham hock or 4–6 slices smoked bacon
- 6–8 cups water or chicken broth
- 1 bay leaf (optional)
- Salt and black pepper, to taste
- 1 tbsp butter (optional, for richness)
Instructions
- Soak (if using dried beans):
Rinse beans and soak overnight in water. Drain and rinse. - Start the pot:
In a large pot, add beans, ham hock (or bacon), onion, garlic, bay leaf, and liquid. - Simmer:
Bring to a gentle boil, then lower heat and simmer uncovered 1½–2 hours, stirring occasionally, until beans are tender and creamy. - Season:
Remove bay leaf and ham hock (shred meat and return it to the pot). Add salt and pepper to taste. Stir in butter if using. - Serve:
Great with cornbread, collard greens, or fried chicken.
Tips & Variations
- Like them creamier? Mash a spoonful of beans against the side of the pot and stir.
- No meat? Use vegetable broth, add smoked paprika, and a splash of olive oil.
- Fresh or frozen limas cook faster—usually 30–45 minutes.
