Here’s a Zucchini Cornbread Casserole that’s moist, savory, and perfect as a side dish or a light main. It combines the sweetness of cornbread with tender zucchini and melty cheese for comfort-food vibes.

Ingredients (Serves 6–8)

Vegetable Layer

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 small onion, diced
  • 1–2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt & pepper, to taste

Cornbread Batter

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp sugar (optional)
  • 1 cup milk
  • 2 large eggs
  • ¼ cup melted butter or oil

Cheese & Topping

  • 1 cup shredded cheddar (or Mexican blend)
  • ½ cup grated Parmesan (optional)
  • Optional: breadcrumbs for topping

Instructions

1. Preheat oven

Preheat oven to 375°F (190°C). Grease a 9×9-inch baking dish.


2. Prepare the vegetables

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion and garlic 2–3 minutes until softened.
  3. Add grated zucchini and corn, cook 3–5 minutes until slightly tender.
  4. Season with salt and pepper, then remove from heat.

3. Make cornbread batter

  1. In a bowl, whisk together:
    • Cornmeal
    • Flour
    • Baking powder
    • Baking soda
    • Salt
    • Sugar (if using)
  2. In another bowl, mix:
    • Milk
    • Eggs
    • Melted butter
  3. Combine wet and dry ingredients, stir until just blended.

4. Assemble the casserole

  1. Fold the sautéed zucchini/corn mixture into the cornbread batter.
  2. Pour half into the prepared baking dish.
  3. Sprinkle half of the cheese on top.
  4. Add remaining batter, then top with remaining cheese (and optional breadcrumbs).

5. Bake

  • Bake 35–40 minutes, until golden on top and a toothpick inserted into the center comes out clean.

6. Serve

  • Let cool 5–10 minutes before slicing.
  • Excellent warm or at room temperature.

🔄 Variations

  • Spicy: Add 1 diced jalapeño or ½ tsp cayenne.
  • Herbed: Mix in fresh thyme or chives for extra flavor.
  • Creamy: Fold in ½ cup sour cream or Greek yogurt for a richer texture.
  • Bacon & Corn: Add cooked crumbled bacon for smoky flavor.
