Bacon Jalapeño Pineapple Rice

Ingredients

  • 2 cups cooked rice (jasmine or long-grain)
  • 5 slices bacon, chopped
  • 1–2 jalapeños, finely diced (remove seeds for less heat)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 cloves garlic, minced
  • 2 tbsp green onions, sliced
  • 1 tbsp soy sauce
  • ½ tsp black pepper
  • Optional: pinch of red pepper flakes or brown sugar

Instructions

  1. Cook bacon in a skillet until crispy. Remove and drain, leaving about 1–2 tbsp bacon fat.
  2. Sauté jalapeños and garlic in the bacon fat for 1 minute.
  3. Add pineapple and cook 2–3 minutes until lightly caramelized.
  4. Stir in rice, bacon, soy sauce, and pepper. Cook until heated through.
  5. Finish with green onions and optional spice or sweetness.

Crispy Wings (Oven or Air Fryer)

Ingredients

  • 2 lbs chicken wings
  • 1 tbsp baking powder (for crispiness)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Oven Method

  1. Heat oven to 425°F (220°C).
  2. Pat wings dry. Toss with baking powder and seasonings.
  3. Bake on a rack for 40–45 minutes, flipping halfway.

Air Fryer Method

  • Cook at 400°F (205°C) for 18–22 minutes, shaking halfway.

  • Honey garlic
  • Buffalo
  • Sweet chili
  • Pineapple habanero
