  • 2 cups (400 g) sugar
  • 4 large eggs, separated

  • 1 cup buttermilk, room temperature
  • 1 cup whole milk, room temperature

  • 1 cup evaporated milk
  • 1 cup sugar
  • 3 large egg yolks
  • ½ cup (1 stick / 115 g) unsalted butter
  • 1 tsp vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

1. Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
  2. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add egg yolks, one at a time, mixing well, then stir in vanilla.
  5. Alternately add dry ingredients and milk/buttermilk mixture to the butter mixture, beginning and ending with dry ingredients. Mix just until combined.
  6. In a separate bowl, beat egg whites to stiff peaks. Fold gently into the batter.
  7. Divide batter evenly among prepared pans. Bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool 10 minutes, then remove from pans to wire racks.

2. Make the Frosting

  1. In a medium saucepan, combine evaporated milk, sugar, egg yolks, and butter.
  2. Cook over medium heat, stirring constantly, until thickened (about 10–12 minutes). Remove from heat.
  3. Stir in vanilla, coconut, and pecans. Let cool slightly until spreadable.

3. Assemble the Cake

  1. Place one cake layer on a serving plate. Spread a third of the frosting on top.
  2. Repeat with second layer. Place third layer on top.
  3. Frost the top and sides with remaining frosting.

  • Extra Moist: Brush cake layers with simple syrup (1:1 sugar and water) before frosting.
