🍫 White Chocolate Haystacks

Ingredients (makes ~20–25 haystacks):

  • 2 cups white chocolate chips or chopped white chocolate
  • 3 cups chow mein noodles (or crispy rice noodles)
  • ½ cup chopped nuts (optional – peanuts, almonds, or pecans)
  • ½ cup shredded coconut (optional)
  • ¼ cup dried fruit (optional – cranberries, raisins, or cherries)

Instructions

  1. Melt chocolate:
    • In a microwave-safe bowl, heat white chocolate in 20–30 second intervals, stirring until smooth. Or melt in a double boiler.
  2. Mix ingredients:
    • In a large bowl, combine chow mein noodles, nuts, coconut, and dried fruit.
    • Pour melted chocolate over the mixture and gently stir to coat everything evenly.
  3. Form haystacks:
    • Using a spoon, drop small mounds of the mixture onto a parchment-lined baking sheet.
  4. Chill:
    • Refrigerate for 30–60 minutes until the chocolate sets completely.
  5. Serve:
    • Store in an airtight container at room temperature or in the fridge for longer freshness.

  • Peanut butter twist: Mix 2 tbsp peanut butter into the melted white chocolate before coating.
