Creamy Vegetable Spread

Ingredients

  • 1 cup mixed vegetables, finely chopped or grated
    (carrots, bell peppers, cucumber, spinach, or broccoli work well)
  • 4 oz (115 g) cream cheese, softened
  • 2 tbsp mayonnaise or Greek yogurt
  • 1 tbsp olive oil or butter
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional: 1 tbsp lemon juice or vinegar

Instructions

  1. Prep Veggies
    • Lightly sauté vegetables in olive oil for 3–4 minutes (or leave raw for a fresh crunch).
    • Let cool completely.
  2. Mix Spread
    • In a bowl, combine cream cheese, mayo (or yogurt), garlic, salt, pepper, and lemon juice.
    • Stir in vegetables until well blended.
  3. Chill & Serve
    • Refrigerate 20–30 minutes to let flavors blend.
    • Spread on bread, toast, wraps, or serve with crackers.

  • Roasted Veggie Spread: Roast peppers, onions, and zucchini, then blend with cream cheese.
