Ingredients (makes 10–12 muffins)

  • 1 ¾ cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ⅓ cup vegetable oil or melted butter
  • 1 large egg
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven:
    • 375°F (190°C). Line a muffin tin with paper liners or grease lightly.
  2. Mix dry ingredients:
    • In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Mix wet ingredients:
    • In another bowl, whisk milk, oil (or butter), egg, and vanilla.
  4. Combine:
    • Add wet ingredients to dry and stir just until combined. Do not overmix.
  5. Bake:
    • Divide batter evenly into muffin cups (about ¾ full).
    • Bake 15–18 minutes, until lightly golden and a toothpick comes out clean.
  6. Cool & enjoy:
    • Let cool for 5 minutes, then transfer to a rack.

💡 Tips for extra-soft muffins

  • Don’t overmix—lumps are okay!
  • For bakery-style tops, sprinkle a little sugar on each muffin before baking.
