🍮 Ingredients (serves 8–10)
For the Crust:
-
1 ½ cups graham cracker crumbs (or digestive biscuits, crushed)
-
½ cup unsalted butter, melted
-
2 tbsp sugar
For the Vanilla Custard:
-
2 ½ cups milk
-
¾ cup sugar
-
3 tbsp cornstarch
-
3 large egg yolks
-
2 tsp vanilla extract
-
2 tbsp unsalted butter
For the Whipped Topping:
-
1 cup heavy whipping cream
-
2 tbsp powdered sugar
-
½ tsp vanilla extract
👩🍳 Instructions
1. Prepare the Crust
-
Preheat oven to 350°F (175°C).
-
In a bowl, combine graham cracker crumbs, melted butter, and sugar.
-
Press mixture evenly into the bottom of a 9×9-inch baking dish.
-
Bake for 8–10 minutes until lightly golden. Let cool completely.
2. Make the Vanilla Custard
-
In a medium saucepan, heat milk over medium heat until just warm.
-
In a separate bowl, whisk together sugar, cornstarch, and egg yolks until smooth.
-
Gradually pour warm milk into the egg mixture, whisking constantly to temper the eggs.
-
Return mixture to the saucepan and cook over medium heat, stirring constantly, until thickened (about 5–7 minutes).
-
Remove from heat and stir in butter and vanilla extract.
-
Pour custard over the cooled crust and smooth the top. Let it cool to room temperature, then refrigerate for at least 2 hours until set.
3. Prepare the Whipped Topping
-
In a chilled bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
-
Spread whipped cream evenly over the set custard layer.
4. Serve
-
Cut into squares and serve chilled.
-
Optional: garnish with chocolate shavings, fresh berries, or a dusting of cinnamon.
💡 Tips
-
Custard consistency: Stir constantly while cooking to prevent lumps.
-
Make ahead: These squares can be made a day in advance—custard flavors improve after chilling.
-
Variation: Layer with crushed cookies or fruit for added texture.
-
Serving: Use a hot knife (dip in warm water) for clean slices.
