🧂 Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1½ cups pineapple chunks (fresh or canned, drained)

  • 1 red bell pepper, chopped

  • 1 small red onion, sliced

  • 2 cups broccoli florets (optional)

  • ½ cup teriyaki sauce (store-bought or homemade; recipe below)

  • 1 tbsp soy sauce (optional, for extra savory flavor)

  • 1 tbsp olive oil or sesame oil

  • Salt and pepper, to taste

  • Optional: green onions & sesame seeds for garnish

  • Cooked rice or noodles for serving


🍯 Quick Homemade Teriyaki Sauce (optional)

In a small saucepan, whisk together:

  • ¼ cup soy sauce

  • 2 tbsp brown sugar or honey

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 clove garlic, minced

  • 1 tsp grated ginger

  • 1 tsp cornstarch + 2 tsp water (to thicken)
    Simmer for 2–3 minutes until glossy.


🧑‍🍳 Instructions

  1. Preheat your oven or grill

    • Oven: 400°F (200°C)

    • Grill: Medium-high heat

  2. Assemble the foil packets

    • Tear 4 large sheets of heavy-duty aluminum foil (about 12×18 inches).

    • Lightly spray or brush with oil.

    • Place one chicken breast in the center of each sheet.

    • Surround with pineapple, bell pepper, onion, and broccoli.

  3. Add sauce

    • Spoon about 2–3 tbsp of teriyaki sauce over each chicken breast.

    • Drizzle lightly with oil and season with salt and pepper.

  4. Seal the packets

    • Fold the long sides up and over the food, then fold the edges to seal tightly — leave a bit of space inside for steam.

  5. Cook

    • Oven: Bake for 25–30 minutes, until chicken reaches 165°F (74°C).

    • Grill: Cook for 20–25 minutes, flipping halfway through.

  6. Serve

    • Carefully open the packets (watch for steam!).

    • Sprinkle with green onions and sesame seeds.

    • Serve over steamed rice or noodles, spooning extra sauce and juices over the top.
