Oh yes 😍 Sweet Potato Pie Bars—all the cozy flavor of classic sweet potato pie in an easy, handheld bar form. Perfect for dessert, snacks, or holiday treats.

🍠 Sweet Potato Pie Bars

Ingredients

Crust:

  • 1½ cups all-purpose flour
  • ½ cup brown sugar
  • ½ tsp salt
  • ½ cup (1 stick) unsalted butter, melted

Filling:

  • 1½ cups cooked and mashed sweet potato (about 2 medium sweet potatoes)
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp vanilla extract
  • ½ cup milk (or evaporated milk for richer flavor)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Make the crust:
    • Mix flour, brown sugar, and salt in a bowl.
    • Stir in melted butter until crumbly.
    • Press mixture evenly into the bottom of the pan. Bake 10–12 minutes.
  3. Prepare the filling:
    • In a large bowl, combine mashed sweet potato, sugars, eggs, milk, vanilla, and spices. Mix until smooth.
  4. Assemble and bake:
    • Pour filling over the pre-baked crust.
    • Bake 25–30 minutes, or until filling is set and lightly golden.
  5. Cool and serve:
    • Let cool completely before slicing into bars.
    • Optional: drizzle with caramel sauce or dust with powdered sugar.

Tips & Variations

  • Nutty twist: Add a pecan or walnut crumble on top.
  • Mini bars: Bake in a muffin tin for individual servings.
  • Extra creamy: Use half-and-half or evaporated milk instead of regular milk.
  • Spice it up: Add a pinch of ginger or allspice for more depth.

These bars are soft, sweet, and perfectly spiced—basically pumpkin pie vibes without the fuss 😏.

If you want, I can give a no-bake sweet potato bar version that sets in the fridge—super quick and just as tasty.

Do you want me to do that?
