Sweet Potato Pie Recipe

  • 2 cups mashed sweet potatoes (about 2–3 medium sweet potatoes)

  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk (whole or 2%)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 (9-inch) unbaked pie crust

Instructions:

  1. Preheat oven: 350°F (175°C).
  2. Cook sweet potatoes: Boil, bake, or microwave until tender. Peel and mash until smooth.
  3. Mix filling: In a large bowl, beat butter, sugar, cinnamon, nutmeg, and salt. Add eggs one at a time, then stir in milk, vanilla, and mashed sweet potatoes until smooth.
  4. Prepare pie crust: Place the unbaked crust in a 9-inch pie dish. Pour the sweet potato mixture into the crust.
  5. Bake: 55–60 minutes, or until the center is set and a knife inserted comes out clean. If the crust browns too fast, cover the edges with foil.
  6. Cool: Let pie cool to room temperature, then refrigerate for 1–2 hours before serving.
