Ingredients (serves 4)
Chicken
- 1 lb (450 g) chicken breast, cut into bite-size pieces
- Salt and pepper, to taste
- 2 tbsp cornstarch
- 2 tbsp oil
Vegetables
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 1 cup pineapple chunks (fresh or canned, drained)
Sweet & Sour Sauce
- 1/2 cup ketchup
- 1/3 cup sugar
- 1/4 cup rice vinegar or apple cider vinegar
- 1 tbsp soy sauce
- 1 tsp garlic powder
Instructions
- Cook chicken
- Season chicken with salt and pepper.
- Toss with cornstarch to lightly coat.
- Heat oil in a skillet over medium-high heat.
- Cook chicken until golden and cooked through. Remove and set aside.
- Cook vegetables
- In the same pan, sauté onion and bell pepper 3–4 minutes until slightly tender.
- Make sauce
- In a bowl, whisk together ketchup, sugar, vinegar, soy sauce, and garlic powder.
- Combine
- Add chicken and pineapple to the pan.
- Pour sauce over everything and stir well.
- Simmer 5–7 minutes until sauce thickens and coats the chicken.
- Serve
- Serve hot over rice, noodles, or with steamed vegetables.
Tips
- For extra crunch, bake or air-fry the chicken after coating.
