Ingredients

Strawberry Swirl

  • ¾ cup strawberry jam or preserves
  • 1 tbsp cornstarch (optional, helps prevent sinking)

Loaf Batter

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk or sour cream

Instructions

  1. Preheat Oven
    • 350°F (175°C).
    • Grease and line a 9Ɨ5-inch loaf pan.
  2. Prepare Strawberry Swirl
    • Stir jam with cornstarch (if using). Set aside.
  3. Make Batter
    • Whisk flour, baking powder, and salt.
    • Cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then vanilla.
    • Add dry ingredients alternately with milk until just combined.
  4. Assemble
    • Pour half the batter into the loaf pan.
    • Spoon half the strawberry mixture over batter.
    • Add remaining batter, then top with remaining strawberry mixture.
    • Swirl gently with a knife—don’t overmix.
  5. Bake
    • Bake 50–60 minutes, until a toothpick comes out clean.
    • If browning too fast, tent loosely with foil.
  6. Cool
    • Cool 10 minutes in pan, then transfer to a rack.

Optional Glaze

  • 1 cup powdered sugar
  • 1–2 tbsp milk or strawberry juice
    Mix and drizzle over cooled loaf.

Tips & Variations

  • Fresh strawberries: Cook chopped strawberries with sugar until jam-like.
  • Lemon twist: Add 1 tsp lemon zest to batter.
  • Cream cheese swirl: Mix 4 oz cream cheese with 2 tbsp sugar and swirl alongside strawberry.
