🍓 Strawberry Cheesecake Stuffed Donuts

Ingredients

For the donuts:

  • 2¼ tsp (1 packet) active dry yeast
  • ¾ cup warm milk (about 110°F / 43°C)
  • ¼ cup granulated sugar
  • 3 tbsp unsalted butter, softened
  • 2 large eggs
  • ½ tsp salt
  • 3½ cups all-purpose flour (plus more for dusting)
  • Oil for frying (vegetable or canola)

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract
  • ¼ cup heavy cream (whipped in to lighten it)

For the strawberry sauce:

  • 1½ cups fresh or frozen strawberries, chopped
  • 2 tbsp sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water (for thickening)

For coating:

  • ½ cup granulated sugar (optional: mix with ½ tsp cinnamon)

Instructions

1. Make the dough

  1. In a large bowl, dissolve yeast in warm milk and let sit 5–10 minutes until foamy.
  2. Add sugar, butter, eggs, and salt; mix until combined.
  3. Gradually add flour, mixing until a soft dough forms.
  4. Knead on a lightly floured surface for 5–8 minutes until smooth and elastic.
  5. Place in a greased bowl, cover, and let rise for 1 to 1½ hours, or until doubled in size.

2. Shape and fry

  1. Punch down dough and roll out to about ½-inch thick.
  2. Cut into circles (about 3 inches wide).
  3. Place on a tray, cover lightly, and let rise 30–45 minutes.
  4. Heat oil to 350°F (175°C) in a deep pot.
  5. Fry a few donuts at a time, 1–2 minutes per side, until golden brown.
  6. Drain on paper towels and roll in sugar while still warm.

3. Make fillings

Strawberry sauce:

  • Cook strawberries, sugar, and lemon juice over medium heat for 5–7 minutes until soft.
  • Stir in cornstarch slurry and cook 1–2 minutes until thickened. Let cool completely.

Cheesecake filling:

  • Beat cream cheese, powdered sugar, and vanilla until smooth.
  • Whip in the cream until fluffy.

4. Fill the donuts

  1. Use a piping bag fitted with a round tip.
  2. Fill half the donuts with cheesecake filling, then add a bit of strawberry sauce inside or spoon it on top.
  3. Garnish with a little extra strawberry sauce and a dusting of powdered sugar.

Shortcut version (super easy!)

Use:

  • Store-bought biscuit dough (like Pillsbury Grands) for donuts
  • Cream cheese frosting (softened and whipped with a bit of cream cheese) for filling
  • Strawberry jam for the sauce

Just fry or air-fry the biscuit dough, inject with frosting + jam, and roll in sugar. Ready in under 30 minutes!
