🔪 Instructions

1. Prep the steak

  • Pat steak cubes dry with paper towels — this helps them sear beautifully.
  • Season generously with salt and pepper (and paprika if using).

2. Sear the steak

  • Heat 1 tablespoon olive oil + 1 tablespoon butter in a large skillet (preferably cast iron) over medium-high heat until hot and shimmering.
  • Add the steak in a single layer — don’t overcrowd the pan (work in batches if needed).
  • Sear for 1–2 minutes per side until browned and just cooked through (medium-rare to medium).
  • Remove steak bites to a plate and keep warm.

3. Make the garlic butter

  • Reduce heat to medium-low.
  • Add remaining 2 tablespoons butter to the pan.
  • When melted, stir in minced garlic and cook 30 seconds, until fragrant (don’t burn it!).

4. Combine

  • Return steak bites to the skillet and toss to coat in the garlic butter sauce.
  • Cook another 30–60 seconds, just to heat through.
  • Sprinkle with fresh parsley or thyme before serving.
