Juicy, cheesy, and way more exciting than classic meatloaf.
Spinach & Mozzarella Meatloaf
Ingredients
- 1½ lb ground meat (beef, or beef/pork mix)
- 1 cup fresh spinach, finely chopped (or frozen, well-squeezed)
- 1 cup mozzarella, shredded or cubed
- ½ cup breadcrumbs (or panko)
- 2 eggs
- ½ cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
Optional glaze
- ½ cup marinara or ketchup
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F / 190°C.
- In a large bowl, mix milk, eggs, onion, garlic, seasoning, salt & pepper.
- Add meat, breadcrumbs, spinach, and mozzarella.
Mix gently — don’t overwork it. - Shape into a loaf and place in a greased loaf pan or on a lined baking sheet.
- Spread marinara or ketchup on top (optional but recommended).
- Bake 45–55 minutes, until internal temp hits 160°F / 71°C.
- Rest 10 minutes before slicing (important for clean slices + melty cheese).
Pro Tips
- Sauté onion & spinach first for extra flavor and less moisture.
- Cubed mozzarella gives gooey pockets; shredded melts more evenly.
- If it’s too wet, add a handful more breadcrumbs.
