Spicy Noodles with Seared Kielbasa, Shrimp, and Soft-Boiled Egg

Ingredients:

  • For the Noodles:

    • 8 oz egg noodles (or your choice of noodles: ramen, udon, or soba work great)

    • 1 tbsp sesame oil (for stir-frying)

    • 2 tbsp soy sauce (or tamari for gluten-free)

    • 1 tbsp sriracha (adjust to heat preference)

    • 1 tbsp rice vinegar

    • 1 tsp honey or brown sugar (for balance)

    • 1 tsp garlic, minced

    • 1 tsp ginger, minced

    • 1/2 tsp red pepper flakes (optional, for extra heat)

    • 1 tbsp peanut butter (optional, for creaminess)

  • For the Kielbasa & Shrimp:

    • 1 link kielbasa, sliced into 1/4-inch thick rounds

    • 6-8 large shrimp, peeled and deveined

    • 1 tbsp olive oil or butter (for searing)

    • 1 tsp paprika

    • Salt and freshly ground black pepper, to taste

  • For the Soft-Boiled Egg:

    • 2 large eggs

  • Garnishes (optional):

    • Chopped green onions

    • Sesame seeds

    • Fresh cilantro or Thai basil

    • Lime wedges


Instructions:

1. Cook the Noodles:

  1. Boil the noodles: Cook the egg noodles (or noodles of your choice) according to the package directions. Once done, drain and set aside. Drizzle with a little sesame oil to prevent sticking and keep them from clumping together.

2. Make the Sauce:

  1. In a small bowl, mix together the soy sauce, sriracha, rice vinegar, honey, garlic, ginger, and red pepper flakes (if using). Stir until combined. If you prefer a creamier sauce, mix in the peanut butter. Adjust the sriracha and sugar to taste depending on how spicy or sweet you want the sauce.

3. Cook the Kielbasa & Shrimp:

  1. Sear the kielbasa: Heat a pan over medium heat and add a little olive oil or butter. Once hot, add the kielbasa slices and cook for 3-4 minutes, turning to get a nice golden-brown sear on each side. Remove from the pan and set aside.

  2. Cook the shrimp: In the same pan, add a little more oil if necessary. Season the shrimp with paprika, salt, and pepper. Cook the shrimp for 2-3 minutes per side, or until they turn pink and are cooked through. Remove from the pan and set aside with the kielbasa.

4. Soft-Boil the Eggs:

  1. Prepare the eggs: Bring a small pot of water to a boil. Gently add the eggs using a spoon and boil for 6-7 minutes for a soft-boiled egg with runny yolks. Once done, immediately transfer the eggs to a bowl of ice water or rinse under cold water to stop the cooking process.

  2. Peel the eggs: Once the eggs are cool enough to handle, gently tap and peel off the shell. Set aside.

5. Assemble the Dish:

  1. In the same pan (with any leftover flavor from the kielbasa and shrimp), toss the cooked noodles with the sauce you made earlier. Stir well to coat the noodles in the spicy, flavorful sauce.

  2. Add the kielbasa slices and shrimp to the noodles and toss to combine, warming everything through for another 2-3 minutes.

6. Serve:

  1. Divide the spicy noodle mixture into bowls. Top each bowl with a soft-boiled egg, sliced in half so the runny yolk can mix with the noodles.

  2. Garnish with green onions, sesame seeds, and fresh cilantro or Thai basil. Serve with lime wedges on the side for a fresh, zesty finish.


Pro Tips:

  • Adjust heat levels: If you prefer a milder version, reduce the amount of sriracha and red pepper flakes. You can also add a little more honey to balance out the spice.

  • Protein variations: You can easily swap out the kielbasa for chicken sausage or tofu for a vegetarian version. Chicken breast or thighs also work great in place of shrimp.

  • Noodles: The egg noodles give a soft, chewy texture, but feel free to use other types of noodles, like ramen, udon, or soba. Just adjust cooking times accordingly.

  • Creamy sauce: If you like a creamy version, mix in a little coconut milk or heavy cream with the sauce for extra richness.
