Ingredients

For the Meatballs:

  • 1 lb ground beef (or a mix of beef & pork)

  • ½ cup breadcrumbs

  • ¼ cup grated Parmesan cheese

  • 1 egg

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ¼ tsp black pepper

  • ½ tsp dried oregano (optional)

For the Sauce:

  • 2 tbsp olive oil

  • 1 small onion, finely diced

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • ½ tsp sugar (optional, to balance acidity)

  • Salt & pepper, to taste

For the Pasta:

  • 12 oz spaghetti

  • Salt for pasta water

  • Grated Parmesan, for serving


Instructions

  1. Preheat Oven: 375°F (190°C) if baking meatballs.

  2. Make Meatballs: In a large bowl, combine beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, pepper, and oregano. Form into 1½-inch meatballs.

  3. Cook Meatballs:

    • Option 1: Pan-fry: Heat 2 tbsp olive oil over medium heat, brown meatballs on all sides (don’t worry about cooking through—they’ll finish in the sauce).

    • Option 2: Bake: Place meatballs on a lined baking sheet and bake 20 minutes until browned.

  4. Make Sauce: In a large saucepan, heat 2 tbsp olive oil. Sauté onion until translucent, 3–4 minutes. Add garlic and cook 30 seconds. Stir in crushed tomatoes, basil, oregano, sugar, salt, and pepper. Simmer 15–20 minutes.

  5. Add Meatballs to Sauce: Gently place meatballs in the sauce. Simmer 15–20 minutes until fully cooked and flavors meld.

  6. Cook Spaghetti: Boil spaghetti in salted water until al dente, then drain.

  7. Serve: Plate spaghetti, top with meatballs and sauce, and sprinkle with Parmesan cheese.
