Here’s a hearty, comforting recipe for Smothered Pork Chops with Potatoes in Gravy — classic Southern-style comfort food 🥩🥔

🥘 Smothered Pork Chops with Potatoes in Gravy

🛒 Ingredients (Serves 4–6)

Pork Chops & Seasoning

  • 4–6 bone-in or boneless pork chops (¾–1 inch thick)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup all-purpose flour (for dredging)

Gravy & Potatoes

  • 3–4 medium potatoes, peeled and sliced ¼–½ inch thick
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 cups chicken broth
  • ½ cup heavy cream (optional, for richer gravy)
  • 1 tsp Worcestershire sauce (optional)
  • 1 tsp dried thyme or Italian seasoning

🔪 Instructions

  1. Prep pork chops
    • Season chops with salt, pepper, paprika, garlic powder, and onion powder.
    • Lightly dredge in flour, shaking off excess.
  2. Sear chops
    • Heat butter and olive oil in a large skillet over medium-high heat.
    • Brown pork chops 3–4 minutes per side. Remove and set aside.
  3. Cook onions & garlic
    • In the same skillet, sauté onions and garlic until softened, ~3 minutes.
  4. Add potatoes & seasoning
    • Layer sliced potatoes over onions. Sprinkle with thyme, salt, and pepper.
  5. Make gravy
    • Sprinkle 2 tbsp flour over onions and potatoes. Stir for 1–2 minutes.
    • Slowly whisk in chicken broth and Worcestershire sauce (if using). Simmer until slightly thickened (~5 minutes).
  6. Smother pork chops
    • Nestle pork chops on top of potatoes.
    • Cover skillet and simmer on low 25–30 minutes, until pork chops are cooked through and potatoes are tender.
    • Optional: Stir in heavy cream for a richer, creamier gravy.
  7. Serve
    • Spoon potatoes and gravy over pork chops. Garnish with fresh parsley if desired.

🌟 Tips & Variations

  • Extra gravy: Add more broth or cream for a saucier dish.
  • Cheesy twist: Sprinkle shredded cheddar over potatoes before covering to melt.
  • Slow cooker option: Layer potatoes, onions, and seasoned pork chops in a crockpot, pour in gravy mixture, and cook LOW 6–7 hours.
  • Make it spicy: Add a pinch of cayenne pepper or smoked paprika.

If you want, I can give you a one-pan, oven-baked version that makes cleanup super easy and keeps the potatoes tender and pork chops juicy.

Do you want me to do that?
